Ingredients:

  • 2 cups Poha (flattened rice), rinsed and drained
  • 1 medium Onion, finely chopped
  • 2 medium Potatoes, peeled and diced
  • 1 medium Carrot, peeled and grated
  • 1/2 cup Peas (fresh or frozen)
  • 1 tsp Mustard seeds
  • 1 tsp Cumin seeds
  • 1/2 tsp Turmeric powder (Haldi)
  • 1/2 tsp Red chili powder (optional)
  • Salt to taste
  • 2 tbsp. Vegetable oil
  • 2 tbsp. Chopped fresh cilantro (for garnish)
  • Lemon wedges (for serving)

Method:

  1. Prepare Poha: Rinse the poha in a fine mesh sieve until it’s moist but not soggy. Drain well and set aside.
  2. Heat Oil: Heat oil in a large pan over medium heat. Add mustard seeds and cumin seeds. Let them splutter.
  3. Sauté Onions and Vegetables: Add chopped onions and sauté until they are translucent. Then add diced potatoes and grated carrot. Cook until they start to soften.
  4. Add Peas and Spices: Stir in peas, turmeric powder, and red chili powder (if using). Cook for another minute.
  5. Combine with Poha: Add the prepared poha to the pan and mix well with the vegetables and spices. Season with salt to taste.
  6. Finish and Serve: Cook for about 5 minutes, stirring occasionally, until the poha is well combined with the vegetables and heated through. Garnish with chopped cilantro and serve with lemon wedges on the side.
