Ingredients:
- 2 cups Poha (flattened rice), rinsed and drained
- 1 medium Onion, finely chopped
- 2 medium Potatoes, peeled and diced
- 1 medium Carrot, peeled and grated
- 1/2 cup Peas (fresh or frozen)
- 1 tsp Mustard seeds
- 1 tsp Cumin seeds
- 1/2 tsp Turmeric powder (Haldi)
- 1/2 tsp Red chili powder (optional)
- Salt to taste
- 2 tbsp. Vegetable oil
- 2 tbsp. Chopped fresh cilantro (for garnish)
- Lemon wedges (for serving)
Method:
- Prepare Poha: Rinse the poha in a fine mesh sieve until it’s moist but not soggy. Drain well and set aside.
- Heat Oil: Heat oil in a large pan over medium heat. Add mustard seeds and cumin seeds. Let them splutter.
- Sauté Onions and Vegetables: Add chopped onions and sauté until they are translucent. Then add diced potatoes and grated carrot. Cook until they start to soften.
- Add Peas and Spices: Stir in peas, turmeric powder, and red chili powder (if using). Cook for another minute.
- Combine with Poha: Add the prepared poha to the pan and mix well with the vegetables and spices. Season with salt to taste.
- Finish and Serve: Cook for about 5 minutes, stirring occasionally, until the poha is well combined with the vegetables and heated through. Garnish with chopped cilantro and serve with lemon wedges on the side.
