Ingredients:
- 1 cup Moong Dal (Split Yellow Lentils) – Must be rinsed thoroughly.
- 1/2 cup Rice (Basmati or any short grain rice works well) – Rinsed thoroughly.
- 1 tablespoon Ghee or Vegetable Oil
- 1 tsp Cumin Seeds (Jeera)
- 1/4 teaspoon Asafoetida (Hing) – Optional, but adds a nice savory note.
- 1 inch Ginger, grated
- 2-3 Green Chilies, slit lengthwise (optional – adjust to taste)
- 1/2 teaspoon Turmeric Powder
- 1/2 teaspoon Red Chili Powder (adjust to taste)
- 4 cups Water – Adjust for desired consistency.
- Salt to taste
- Fresh Cilantro Leaves, chopped (for garnish)
Instructions:

Rinse the Dal & Rice: Rinse the moong dal and rice thoroughly under cold water until the water runs clear. This removes excess starch.

Sauté Spices & Aromatics: Heat ghee or vegetable oil in a pot over medium heat. Add cumin seeds and asafoetida (if using). Let them splutter for about 30 seconds. Add the grated ginger, and slit green chilies (if using) and sauté until softened – about 2-3 minutes.

Add Spices: Reduce the heat slightly. Add turmeric powder and red chili powder. Sauté for another 30 seconds, stirring constantly to prevent burning.

Combine Ingredients: Add the rinsed moong dal and rice to the pot. Stir well to coat with the spices.

Add Water & Salt: Pour in 4 cups of water and add salt to taste. Bring the mixture to a boil.

Simmer & Cook: Once boiling, immediately reduce the heat to the lowest possible setting. Cover the pot tightly with a lid. Let it simmer for 20-25 minutes, or until the dal and rice are completely cooked and mushy. Don’t lift the lid during this time!

Rest & Garnish: Remove from heat and let it rest, covered, for another 5-10 minutes. This allows the flavors to meld further. Garnish with chopped fresh cilantro leaves.

Serve: Serve hot with a dollop of ghee or yogurt (optional).
Tips & Variations:
- Consistency: Adjust the amount of water based on your preference for a thicker or thinner khichdi.
- Adding Vegetables: You can add chopped vegetables like carrots, peas, or beans during the last 10 minutes of cooking.
- Lemon Juice: A squeeze of lemon juice at the end adds brightness to the flavor.
