The aroma of sweet pumpkin mingling with warm spices fills the kitchen as twilight descends. This Kaddu Sabji simmers gently on the stove, a vibrant orange hue hinting at the comforting sweetness to come – a beloved dish prepared with love for Diwali gatherings.
Ingredients:
- 1 medium pumpkin (Kaddu), about 2 lbs, peeled and cubed into 1-inch pieces
- 1 tablespoon Vegetable Oil or Ghee
- 1 small Onion, finely chopped
- 1 teaspoon Ginger Paste
- 1 Green Chili, slit lengthwise (adjust to taste)
- ½ teaspoon Turmeric Powder
- 1 teaspoon Red Chili Powder (adjust to taste)
- ½ teaspoon Coriander Powder
- 1/4 teaspoon Garam Masala
- 1 tablespoon Lemon Juice (freshly squeezed is best!)
- 2 tablespoons Sugar (adjust to your preference – start with less and add more)
- Salt to taste
- Fresh Cilantro Leaves, chopped (for garnish)

Prepare the pumpkin: Peel the pumpkin thoroughly. Cut it into 1-inch cubes. A good trick is to score a shallow cross on each cube with a knife – this helps it cook evenly and absorb flavors better.

Sauté: Heat oil or ghee in a medium saucepan over medium heat. Add the finely chopped onion and sauté until softened and lightly browned – about 5-7 minutes, stirring frequently.

Add Ginger & Chili: Add the ginger paste and slit green chili to the pan. Sauté for another minute until fragrant.

Add Spices: Reduce the heat slightly. Add turmeric powder, red chili powder, coriander powder, and garam masala. Stir continuously for 30-60 seconds, allowing the spices to bloom – don’t let them burn!

Add pumpkin & Water: Add the cubed pumpkin to the pan. Pour in some water (about 2 tablespoons) to cover the vegetables. Season with salt to taste.

Simmer & Cook: Bring the mixture to a boil, then immediately reduce the heat to low, cover the saucepan tightly, and simmer for 20-25 minutes, or until the pumpkin is tender. Stir occasionally to prevent sticking.

Khatti Meethi (Tangy Sweet): Now it’s time for the magic! Add the lemon juice and sugar. Stir well to dissolve the sugar completely. Taste and adjust the sweetness by adding more sugar if needed. Simmer for another 5 minutes, allowing the flavors to meld together beautifully.

Garnish & Serve: Garnish generously with chopped cilantro leaves. Serve hot with roti, naan, or rice.
Tips & Variations:
- Kasuri Methi (Dried Fenugreek Leaves): Adding ½ teaspoon of crushed kasuri methi towards the end will add a wonderful earthy aroma and flavour.
