Ingredients:
- 3/4 cup finely chopped fresh parsley
- 3/4 cup italian breadcrumbs
- 2 cloves garlic, minced
- 1/4 tsp. red pepper flakes
- 1 1/2 lb. plum tomatoes
- 1/4 cup olive oil
- 1/4 tsp. salt
- 1/4 tsp. black pepper
- 1/4 cup grated parmesan cheese
Method:
- Preheat oven to 400 F. Combine parsley, breadcrumbs, garlic, and red pepper flakes in a small bowl; set aside.
- Cut tomatoes in half lengthwise and remove the seeds and juice.
- Using a spoon, fill with breadcrumb mixture. Place in a shallow baking dish.
- Drizzle with olive oil and season with salt and pepper. Cover with aluminium foil.
- Bake 30 mins. Remove from oven; uncover and top with parmesan cheese. Broil 1 or 2 mins more until lightly browned.
