Ingredients:

  • 3/4 cup finely chopped fresh parsley
  • 3/4 cup italian breadcrumbs
  • 2 cloves garlic, minced
  • 1/4 tsp. red pepper flakes
  • 1 1/2 lb. plum tomatoes
  • 1/4 cup olive oil
  • 1/4 tsp. salt
  • 1/4 tsp. black pepper
  • 1/4 cup grated parmesan cheese

Method:

  1. Preheat oven to 400 F. Combine parsley, breadcrumbs, garlic, and red pepper flakes in a small bowl; set aside.
  2. Cut tomatoes in half lengthwise and remove the seeds and juice. 
  3. Using a spoon, fill with breadcrumb mixture. Place in a shallow baking dish. 
  4. Drizzle with olive oil and season with salt and pepper. Cover with aluminium foil.
  5. Bake 30 mins. Remove from oven; uncover and top with parmesan cheese. Broil 1 or 2 mins more until lightly browned.

Yield: 4-6 servings
