- 1/2 lb strawberries, rinsed, stemmed and halved
- 1/4 cup orange juice
- 1/4 cup granulated sugar
- 1 cup mascarpone cheese
- 2 tbsp. heavy cream
- 2 tbsp. powdered sugar
- 2 tsp. almond extract
- 1/4 cup sliced almonds, toasted
- Fresh mint sprigs
Method:
- Combine strawberries, orange juice and granulated sugar in medium bowl; cover and chill 30 mins.
- Combine mascarpone cheese, heavy cream, powdered sugar and almond extract in mixing bowl, mixing well.
- Spoon strawberry mixture into 4 stemmed glasses; top each with one-fourth of mascarpone mixture. Garnish with almonds; add fresh mint, if desired.
