Ingredients:

  • 1/2 lb strawberries, rinsed, stemmed and halved
  • 1/4 cup orange juice
  • 1/4 cup granulated sugar
  • 1 cup mascarpone cheese
  • 2 tbsp. heavy cream
  • 2 tbsp. powdered sugar
  • 2 tsp. almond extract
  • 1/4 cup sliced almonds, toasted
  • Fresh mint sprigs

Method:

  1. Combine strawberries, orange juice and granulated sugar in medium bowl; cover and chill 30 mins.
  2. Combine mascarpone cheese, heavy cream, powdered sugar and almond extract in mixing bowl, mixing well.
  3. Spoon strawberry mixture into 4 stemmed glasses; top each with one-fourth of mascarpone mixture. Garnish with almonds; add fresh mint, if desired.
