- 3 medium zucchini, thinly sliced
- 4 medium tomatoes, peeled and sliced
- 3/4 cup grated parmesan cheese
- 2 tbsp. minced garlic
- 1 tbsp. chopped fresh thyme
- 2 tbsp. olive oil
Method:
- Preheat oven to 400 F. Arrange half of the zucchini slices in the bottom of a shallow baking dish. Cover zucchini with half the tomato slices. Sprinkle with 1/4 cup parmesan cheese.
- Add remaining zucchini and tomatoes. Sprinkle with garlic and thyme. Season with salt and pepper to taste.
- Drizzle with olive oil and sprinkle with remaining cheese.
- Bake for 20 to 25 mins or until zucchini is tender. Garnish with sprigs of fresh thyme. Serve with slotted spoon.
