Ingredients:

  • 3 medium zucchini, thinly sliced
  • 4 medium tomatoes, peeled and sliced
  • 3/4 cup grated parmesan cheese
  • 2 tbsp. minced garlic
  • 1 tbsp. chopped fresh thyme
  • 2 tbsp. olive oil

Method:

  1. Preheat oven to 400 F. Arrange half of the zucchini slices in the bottom of a shallow baking dish. Cover zucchini with half the tomato slices. Sprinkle with 1/4 cup parmesan cheese.
  2. Add remaining zucchini and tomatoes. Sprinkle with garlic and thyme. Season with salt and pepper to taste.
  3. Drizzle with olive oil and sprinkle with remaining cheese.
  4. Bake for 20 to 25 mins or until zucchini is tender. Garnish with sprigs of fresh thyme. Serve with slotted spoon.
